Flourless Black Bean Brownie Cups

These are delicious, easy, and low-carb!

1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable oil
1/4 cup cocoa powder
1 pinch salt
1 teaspoon vanilla extract
3/4 cup white sugar

Mix ingredients in food processor or blender. Line muffin/cupcake pan with papers, and divide batter between them. Bake at 350 for 20 minutes. Makes 12.
